Once vegetables are soft, decant into the pan with the cooked masala, then using a potato masher begin to mash the vegetables until all well Incorporated.
  4. Garnish with the remaining butter, fresh coriander and finely chopped onion. This is then served with a buttered pav (roll) that is fried on a tawa (skillet or frying pan).
