- Take For Pakoda
- Prepare 1/2 cup besan/gram flour

- Get Pinch turmeric powder
- Take 1 green chilli finely chopped
- Get 3 tbsp water to make batter
- Prepare As needed Oil for deep frying
- Prepare For Jholi
- Make ready 1 lo plain Buttermilk
- Prepare 1/4 cup Besan/gram flour
- Get Pinch turmeric powder

- Make ready 2 tbsp oil
- Prepare Pinch hing / asafoetida
- Prepare 3/4 tsp mustard seeds
- Make ready 1/2 tsp jeera/cumin seeds
- Get 5-6 methi(fenugreek) seeds
- Take 1/2 tbsp dry kasturi methi
- Make ready As needed Coriander leaves
- Take For Palak sabzi
- Get 1 kg Palak/spinach
- Prepare 2 tbsp oil
- Take Pinch hing/asafoetida
- Make ready Pinch turmeric powder
- Get to taste Salt
- Take 2 tablespoon Slit green chilies
Raga Pahadi is said to belong to Bilawal thaat. Superficially, Pahadi has the same notes as do Bhopali and Deshkar and Shuddha kalyan or Mohana Kalyani. Nothing is more potent than a red lehenga. Team it up with centre parted hair, kohl rimmed eyes, a dramatic mathapatti and pahadi nath.
Steps to make Pahadi Style:
- For Pakoda :- Add besan in a bowl and then add turmeric powder, salt and green chilli.Now add water as required to make a batter.Furthermore, deep fry the pakodas,once turned golden brown, drain and keep aside
- For Jholi :- Add besan,turmeric powder, salt and green chilli in a large bowl. Add buttermilk, water & mix properly.Take oil, and temper mustard, jeera, methi seeds & dry kasuri meethi.Now add prepared above buttermilk mixture and mix for 15 mins.Later, the mixture will start to thickens.Finally, top with coriander leaves and serve.
- For Palak sabzi :- Heat oil in a kadhai and then add pinch of hing and turmeric powder along with slit 2 green chilies.Now add chopped palak into kadhai and salt.Cover the kadhai with a lid and let it cook for 10-15 mins.Then check and stir it well and dry if there is water in it.
