- Take 250 g small/ medium Karelas
- Take 1 large onion - skiced
- Make ready 1-2 , green chillies - skiced
- Prepare as needed Oil for frying
- Get 1 Tbsp ready made dry achaar/ mango pickle masala
- Prepare 1/2 tsp dry mango/ amchoor powder
- Get to taste Salt
- Take 1/4 tsp turmeric powder

Steps to make Piyaji Crispy Karela:
- Wash the karelas well and chop off the ends.
- Chop the karelas into roundels. Discard the seeds if ripe, big and thick.
- Apply 1Tbsp salt and turmeric and leave covered for 2-3 hours.
- After 3 hrs, squeeze the karelas well to remove the bitterness and wash them well to remove the extra salt. Squeeze and keep in sieve for drying.
- Heat oil for frying. Fry green chillies and keep aside. Next fry onion slices on high till golden. Drain and keep aside.
- Fry the onion roundels on medium heat till crisp and brown. Drain and keep aside.
- In a pan/ wok. Add all the fried ingredients, then add pickle masala, mango powder and salt if required. Toss well on medium to low heat for 1 minute, till masala coats the karelas and onions well. Serve with chappatis or paranthas.
- This crispy version of karelas can be eaten as a snack too.
